There is no direct heat from below; the drippings never burn even with this high temperature exposure without adding water. Because the fuel is charcoal, the cooking starts real hot and then slowly cools down as the charcoal burns down. A turkey is ready in two hours but stays moist and hot for hours longer so you can serve it when you're ready.
